Spinach and Feta Quiche

500g frozen creamed spinach
1 Cup of grated cheddar cheese
1 Cup chopped feta cheese
1 cup cream
½ cup chopped bacon
½ cup chopped onion
6 eggs
2 TSP baking powder

• Cook spinach and drain well
• Fry onion and bacon and cool
• Mix all ingredients together and season with salt and black pepper
• Place in pie dish and bake at 180 degrees (6) for 30-35 minutes.

Onion Quiche

4 large sliced onions (very thin)
100g streaky bacon –chopped
12.5ml oil
60g butter
3 eggs
300ml cream
salt and black pepper
150g cheddar cheese

• Saute bacon in oil and butter and set aside
• Saute onions very slowly until soft
• Combine the eggs, cream, seasoning, cheese, bacon and onions
• Roll out pastry and flatten- pour filling over
• Bake for 35-45 minutes at 180 degrees (6)
Base:
• Sieve 225g flour with ½ TSP salt. Rub 100g butter lightly into the flour until the mixture resembles breadcrumbs.
• Make a whole and add 60ml cold water or just enough to produce a soft dough. Press the pastry into a pie dish and cut away the extra pieces from the sides.
