Spinach and Feta Quiche
500g frozen creamed spinach
1 Cup of grated cheddar cheese
1 Cup chopped feta cheese
1 cup cream
½ cup chopped bacon
½ cup chopped onion
6 eggs
2 TSP baking powder
Cook spinach and drain well
Fry onion and bacon and cool
Mix all ingredients together and season with salt and black pepper
Place in pie dish and bake at 180 degrees (6) for 30-35 minutes.
Onion Quiche
4 large sliced onions (very thin)
100g streaky bacon chopped
12.5ml oil
60g butter
3 eggs
300ml cream
salt and black pepper
150g cheddar cheese
Saute bacon in oil and butter and set aside
Saute onions very slowly until soft
Combine the eggs, cream, seasoning, cheese, bacon and onions
Roll out pastry and flatten- pour filling over
Bake for 35-45 minutes at 180 degrees (6)
Base:
Sieve 225g flour with ½ TSP salt. Rub 100g butter lightly into the flour until the mixture resembles breadcrumbs.
Make a whole and add 60ml cold water or just enough to produce a soft dough. Press the pastry into a pie dish and cut away the extra pieces from the sides.
