Malva Pudding

Cream 20 ml butter with 250 ml castor sugar.

Add 2 Eggs one at a time, beating well.

Add 1 Tbls apricot jam and stir in 1 Tsp bicarb with 125ml milk and 1 tsp vinegar.

Add 250ml sifted flour with a pinch salt to the butter and sugar mix, alternating with the milk.

Pour butter into a well buttered oven dish and bake at 180 degrees for 45 minutes.

COMBINE: 250 ml Cream
180 ml Sugar
125 g butter
125 ml boiling water
5 ml Vanilla Essence

Bring to the boil and pour over the pudding after it has cooled for a few minutes.

Serve hot with freshly whipped cream.

Diana’s Chocolate Cake

500ML SUGAR ICING
250 ML OIL 3 CUPS SIFTED ICING SUGAR
250ML WARM WATER 2 TBSP COCOA
6 EGGS (SEPARATED) 125ML BUTTER
500ML FLOUR A LITTLE MILK OR WATER
30ML BAKING POWDER
2.5ML SALT
60ML COCOA

• Place sugar, oil, water and egg yolks in a bowl, beat until mixture is thick and cool
• Sift flour, baking powder, salt and cocoa together 3 times
• Add sifted ingredients to oil mixture and fold in
• Whisk egg whites in clean bowl until just beginning to form peaks
• Fold into mixture
• Line 2 cake tines with grease proof paper
• Divide mixture and bake 180 degrees for 40 minutes

Icing
• Sift icing sugar and cocoa together
• Cream butter and add icing sugar little by little
• If mixture becomes too stiff add 15-30ml milk or water
